23/06/2020

The University of Derby are offering a course for hospitality businesses called ‘Menu Design and Development’

In a highly competitive industry with increasingly knowledgeable consumers, ensuring guests expectations are met requires frequent review, evaluation and development of the menu items offered. In particular, many chefs develop signature dishes that are innovative to help make themselves and their business distinctive.

In this short course you will develop an understanding of the complex factors to be taken into consideration when designing new menus. You will then apply your learning in the creation of a menu for your own workplace.  You will also learn how to critically evaluate the success of the menu.
